The fault sounds like an air-lock and must therefor be bled to remove air in the system. It may also be worth checking the thermostat is working correctly. If the fan is cutting in then the temp sensor for the fan sounds fine. Re-bleed the cooling system and that should resolve your issue. 307 SW 1.6HDi SE / 206 2.0HDi.
I've also had problems recently with my Peugeot 307 1.4 LX 5dr 2001.
